For the chicken shawarma, you will need:
- 2 pounds boneless, skinless chicken thighs
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander

- 1 tablespoon ground allspice
- 1 tablespoon ground ginger
- 1 tablespoon garlic powder
- 1 tablespoon salt
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 onion, thinly sliced
For the yogurt sauce, you will need:
- 1 cup Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 garlic clove, grated
- 1/4 teaspoon salt
Instructions
1. In a large bowl, mix together the cumin, coriander, paprika, cinnamon, allspice, ginger, garlic powder, and salt.
2. Add the olive oil and lemon juice to the spice mixture and stir until well combined.
3. Add the chicken thighs to the bowl and toss until they are fully coated in the spice mixture.
4. Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 30 minutes or up to 24 hours.
5. Preheat the oven to 425°F.
6. Spread the sliced onions on the bottom of a roasting pan.
